Observation: A connection exists between the sewage system and drains from the ice machine and bar area ice bins. Currently the ice machine and ice bins have air breaks.
Correction: Design the sewage system in a manner that would preclude a connection between the sewage system and the drain from which food is placed. Provide a proper air gap. Correct By: 09-Mar-2015
- USING A HANDWASHING SINK - ACCESSIBLE
Observation: Handwashing sink in dishwash kitchen area is located near dishwashing unit. Current location is not easily accessible for cooks to perform proper handwashing.
Correction: Handwashing sink needs to be accessible at all times, free of obstructions, and in working condition at all times to allow for frequent handwashing. Correct By: 01-Jun-2015

Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying in bar area.

- UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - CLEAN DRY LOCATION
Observation: Dishwash racks are currently improperly stored on the floor in the kitchen area.
Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor. Correct By: 19-Mar-2015
- HANDWASHING SINKS, INSTALLATION - NON-HAND OPERATED
Observation: Handwashing sink in dishwash kitchen area currently has small operation knobs.
Correction: Employee handwashing sinks shall be non-hand operated or have 4" handles to ensure hands are not recontaminated after cleaning. Correct By: 12-Mar-2015

Observation: The kitchen exit door is not tight fitting and allows the entry of insects or rodents.

Observation: No handwashing signage provided at kitchen, bar, and employee handwashing sinks.
Correction: Provide handwashing signage at all handwashing sinks used by food employees. Signage was provided to operator during inspection. Correct By: 09-Mar-2015
- REPAIRING - PREMISES, STRUCTURES, ATTACHMENTS, AND FIXTURES - METHODS
Observation: The ceiling in the kitchen cook area has visible flaking and cracking.
Correction: Maintain the physical facilities so they are in good repair at all times. Repair or replace the ceiling so it is smooth and easily cleanable. Operator plans to repair ceiling once snow melts. Correct By: 08-May-2015
