  • Critical: PHF/TCS, COLD HOLDING (corrected on site)
    Observation: Sliced roast beef, chicken salad, and other potentially hazardous foods are cold held at 50°F and greater in the True TWT-48 work table cooler.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Potentially hazardous foods moved to adjacent reach-in cooler, and operator made service call for repair of the cooler. Discard any potentially hazardous foods which have been above 41F for more than four hours or for an unknown amount of time.
  • Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
    Observation: There is no detectable level of sanitizer in the warewashing machine. The sanitizer supply container has liquid which is nearly clear instead of the normal yellow. The priming switch is also not operational.
    Correction: New container connected and run several loads now providing a consistent 50 ppm. Repair prime switch as well.
  • Critical: SEWAGE - BACKFLOW PREVENTION (repeated violation)
    Observation: There is an air break on the ice machine drain. The ice machine has been raised, but there is still no vertical gap between the bottom of the drain and the top of the overflow pipe.
    Correction: Design the sewage system in a manner that would preclude a direct connection between the sewage system and the drain from which food is placed. Provide a full air gap on the ice machine drain. Correct By: 13-Sep-2015
  • FOOD TEMPERATURE MEASURING DEVICES - SMALL DIAMETER PROBE (repeated violation)
    Observation: Probe thermometer is not designed for thin mass foods. Depth mark extends more than two inches down the stem.
    Correction: Provide a thermometer capable of taking temperatures in thin mass food items. Recommended operator obtain a digital thermometer with a tapered tip. Correct By: 24-Sep-2015
  • LIGHT BULBS - PROTECTIVE SHIELDING
    Observation: Lights located in wood door reach-in cooler, storage closet with onions, walk-in cooler, and rear room area with food pans/dishes are not shatter resistant.
    Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs. Correct By: 10-Dec-2015
