    Observation: Cole slaw in the upright cooler is cold held at 49°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F
  • Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS
    Observation: The chlorine sanitizer in the 4 compartment sink is not being used according to EPA registed label use instructions and is at 200 PPM.
    Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
  • ADEQUATE EQUIPMENT FOR TEMPERATURE CONTROL
    Observation: The upright reach-in cooler is unable to hold PHF/TCS foods at or below 41 F.
    Correction: Repair, replace, or adjust the equipment.
  • NON-FOOD CONTACT SURFACES - CLEAN
    Observation: The door gaskets, on the pizza prep table, are soiled.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.

    Observation: Various food items in the top half of the prep cooler are holding at 42°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Foods were rearranged during inspection, placed near cold air vents from bottom half of cooler, lids were closed. Service company will be called to come and look at machine. A follow-up inspection will be completed once repairs have been made.
