Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS (corrected on site) Observation: Employee observed handling bread with bare hands. Discussed use of gloves for all products not going thru a cook kill step. Employee changed.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
Critical: RTE/PHF-TCS PROPER DATE MARKING Observation: Alfredo sauce in walk-in cooler is date marked 12/23/15. This is improperly date marked. Product was frozen for some time and placed back in walk-in to be used.
Correction: Once foods have been frozen then need to be labeled with how many of the 7 days they have left before being thrown out. Example- soup is made and used for 3 days, then frozen for a month, eventually it is thawed and placed in the walk-in. The time left for use is 4 days. The 7 days for used does not start again for 7 days after being frozen. Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
HANDWASHING SINKS, INSTALLATION - WATER TEMPERATURE Observation: Hot water is not offered at handwashing sink. Fix the hot water to provide hot water as required.
Correction: Water temperature at a handwashing sink shall be at least 85°F and no more than 110°F.
HANDWASHING SINKS, INSTALLATION - NON-HAND OPERATED Observation: Handwashing sink is not non-hand operated or is operating incorrectly. If knobs need to be replaced to correct no hot water available for handwashing then they will need to be upgraded to hands free.
Correction: Employee handwashing sinks shall be non hand operated and if metered shall provide a flow of water without the need for reactiviation for at least 15 seconds.

WAREWASHING - CHEMICAL SANITIZER CONCENTRATION Observation: No test kit is available for monitoring sanitizer concentration.
Correction: Provide a test kit to allow accurate determination of the sanitization concentration.
THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE Observation: Coolers are not equipped with a temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
FLOORS, WALLS AND CEILINGS - CLEANABILITY Observation: The ceiling in the kitchen needs repair.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.
