Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: Condiment cooler is at 50 F. This cooler is for condiments only. 41 F is cold hold for any temperature for safety foods.
Correction: Adjust cooler to maintain 41 F if used for temperature control for safety foods.
FLOORS, WALLS AND CEILINGS - CLEANABILITY Observation: There is a new basement storage area in the process of being finished. Seal insulation and openings.
