Observation: Foods hot holding in hot well is hot held at 129-134°F. Spaghetti sauce, 129, sausage gravy 132, ground beef 134F. Staff discarded minimal quantities from hot well voluntarily.
Correction: Maintain hot potentially hazardous foods at or above 135°F.

Observation: Several foods in coolers has exceeded its date mark or is not provided with a date mark. Exceeding: gyro sauce, mashed potatoes, green beans. No marking sliced plated cheescakes, deli turkey, roast beef, clam chowder. Staff discarded expired items and will add dates to unmarked items to ensure 7 day rotation.
Correction: Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked.

Observation: There is no Wisconsin Certified Food Manager for this establishment. Provided application to have Owner obtain at least 1 WI CFM.

Observation: Wiping cloth solution is dirty and could not detect chlorine. Staff refilled immediately with bleach and water, 100 PPM.
