HOT AND COLD WATER - CAPACITY - QUANTITY AND AVAILABILITY Observation: The hand wash sink in the mobile food truck is incapable of meeting the peak demands of the food establishment.
Correction: Provide an adequate water source or system that will meet the peak demands of this facility and also ensure that hot water generation will meet peak water demands as well. Correct By: 22-May-2015
USING A HANDWASHING SINK - ACCESSIBLE Observation: Handwashing sink observed to be out of order during inspection and is unavailable for proper handwashing. Owner stated there is a motor out on the pump for the hand wash sink.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing. Must provide hand washing sink with running hot water in order to operate. Can not operate mobile food truck until running hot water at the hand sink in provided. Correct By: 22-May-2015

Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
Critical: RTE/PHF-TCS PROPER DATE MARKING Observation: Hot dogs in two door cooler was not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
