    Correction: Maintain food contact and non-food contact surfaces in clean condition. Increase cleaning frequency of all items listed.

    Observation: The back door was not closed all the way and was not tight-fitting. Flies were present in the kitchen.

    Observation: No handwashing was observed during the inspection. No handwashing occured between cleaning then cooking and rinsing a dish then cooking.
    Correction: Before working with food, clean equipment, utensils, and single-use or single service articles food employees shall properly wash their hands. Correct By: 28-Aug-2014
  • Critical: PHF/TCS, HOT HOLDING (corrected on site)
    Observation: At the buffet, the chicken in sauce was 112F and the shishkabobs were 112F. Both were reheated during the inspection and later measured 162F and 160F, respectively.
    Correction: Reheat and/or cook all potentially hazardous food to appropriate temperature before hot holding on buffet. Maintain hot potentially hazardous foods at or above 135°F. Correct By: 28-Aug-2014

    Observation: Noted raw chicken and beef stored over vegtables in walk in cooler. All raw animal products shall be stored under ready to eat products. Management moved all items to proper place in cooler during inspection.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
  • Critical: PHF/TCS, COLD HOLDING
    Observation: Eggs on prep cooler were noted at 63F. All potentially hazardous foods shall be cold held at 41F or below.
    Correction: Maintain cold potentially hazardous foods at or below 41°F
  • NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
    Observation: Noted soiled area inbetween the fryer equipment and wok line. Clean as often as needed.
    Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
  • PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR
    Observation: Noted two faucets on (4)-compartment sink with leaks. Repair faucets. See below.
    Correction: The plumbing system shall be maintained in good repair. Repair or replace defective or leaking plumbing.
