Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) Observation: Soup in prep cooler was improperly date marked. Discussed that soup has a 7 day shelf like after removal from freezer and shall be date marked once it is removed from the freezer. Tomatoes in The AdvantEdge were not date marked. All potentially hazardous food was date marked with the proper date during the inspection.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
FOOD CONTACT SURFACES - SOILED Observation: Inside of ice machine and industrial can opener noted in need of cleaning.
Correction: Maintain food contact surfaces in a clean condition.
IN-USE UTENSILS, BETWEEN USE STORAGE Observation: Ice scoops at bar were stored in the ice bin with handles in direct contact with the ice. Single service containers were being used as scoop for bulk ingredients (in basement). Single service containers were being stored inside bulk ingredient containers. Discussed getting scoops with handles for bulk ingredients and storing scoop in product with handle extended.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.

FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR Observation: Ground beef is stored on the floor in the walk-in freezer.
Correction: Store all food items 6 inches above the floor.
CLEANING, FREQUENCY AND RESTRICTIONS Observation: Floor is soiled in the basement behind juice concentrate/soda boxes.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
