Observation: Wiping cloth used for wiping counters stored on prep cooler cutting board.

Observation: The crust in the walk in cooler is stored on the floor under the shelves.
Correction: Store all food items 6 inches above the floor.

Observation: A chlorine and Quat test kit is not available for checking sanitizer concentrations in the basement sinks or the dishwasher.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
- FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION
Observation: Food (cheese curds, fries) is subject to potential contamination by being stored in containers that have duct tape on them due to container cracking. This does not allow for proper cleaning or sanitizing.
Correction: Change methods or procedures to protect foods from contamination.
- CLEANING, FREQUENCY AND RESTRICTIONS
Observation: There is a syrup spill on the floor at the soda boxes in the basement.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
