Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE (repeated violation) Observation: Pizza prep cooler is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device. Make sure the cooler is maintaining a temperature of 41 degrees F or below.\
NOTE: This is a repeat violation. If noted 3 times in a row a reinspection will be required. There is a charge for a reinspection.
VENTILATION HOOD SYSTEM - ADEQUACY (repeated violation) Observation: The is a deep fat fryer in the kitchen that is not adequately covered by a ventilation hood system, it is sitting on a prep table.
Correction: All open fryers and grills must be placed under and approved ventilation hood with fire suppression. Provide additional ventilation hoods or devices to prevent grease and condensation from collecting on walls and ceilings. Contact the department of safety and proferssional services for requirments on plan review and installation.

THERMOMETERS - FUNCTIONALITY - WARMEST PART OF UNIT Observation: A thermometer is not available to measure the warmest part of the pizza cooler.
Correction: Provide a thermometer so that it is located in the warmest part of the refrigeration unit.
WAREWASHING MACHINES - OPERATING INSTRUCTIONS Observation: The machine wash and sanitize cycles are not reaching design temperatures for wash and sanitize rinse as indicated on data plate.
Correction: Operate the warewashing machine consistent with the machine’s data plate and other manufacturer’s instructions. Service was called at inspection. A four-compartment sink is set up and available for wash, rinse,sanitize. Use manual sink method until machine is working as designed. Check gauges and cycle times daily to ensure they are working as designed.
