  • TOXIC SUBSTANCES - IDENTIFYING INFORMATION, PROMINENCE - COMMON NAME-WORKING CONTAINER (corrected on site)
    Observation: Working spray bottle of Bleach water used as sanitizer in bar area was not labeled with contents. Employee labeled spray bottle during inspection.
    Correction: Label working containers.
  • CLEANING, FREQUENCY AND RESTRICTIONS
    Observation: Flooring under and around dry storage in the basement is soiled with dirt and other debris.
    Correction: Clean the physical facilities at a frequency necessary to keep them clean.

  • Critical: REHEATING FOR HOT HOLDING
    Observation: Per a conversation with kitchen staff, soups are reheated to 135F in two hours.
    Correction: Adjust procedures and methods to properly reheat food. When reheating soups from cooled state, reheat to 165F within two hours and then bring the temperature back down to hot hold at 135F or above.
  • TOXIC SUBSTANCES - SANITIZER CRITERIA
    Observation: A water and degreaser solution is currently being used to wipe down table tops and bar counter top. Degreaser is not an approved sanitizer.
    Correction: Sanitizer shall meet the requirements under 40 CFR 180.940. A bleach water sanitizer bucket is used in the kitchen, suggest using the same for the bar area and table tops.
  • THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE
    Observation: There is no internal thermometer in the 2 Door Upright Cooler.
    Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
