FOOD CONTACT SURFACES - SOILED Observation: The meat slicer/grinder was not clean and was visibly soiled. This unit must be broken down and washed and sanitized after each use.
Correction: Maintain food contact surfaces in a clean condition.
PACKAGED AND UNPACKAGED FOOD - COVERED CONTAINERS OR WRAPPING Observation: Foods in the prep table were observed to be unwrapped or uncovered.
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.
EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED Observation: Remove all wooden shelving from the kitchen area. Replace wooden shelving with approved materials.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY Observation: The kitchen equipment on the cooking line is not cleaned on a frequent basis.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
SURFACE CHARACTERISTICS - INDOOR AREAS Observation: The walls and ceilings in the kitchen need to be cleaned, repaired and repainted. Remove all loose paint.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
PUBLIC RESTROOMS - GOOD REPAIR AND SUPPLIED WITH TOILET TISSUE Observation: The wall next to the men's urinal is in poor repair and needs to be fixed with approved materials.
Correction: Maintain the bathroom in good condition.

MAINTAINING PREMISES, UNNECESSARY ITEMS AND LITTER Observation: The basement has a large accumulation of items that are not necessary for the restaurant and should be removed. This accumulation will be required to be removed at change of operator.
Correction: Items that are unnecessary to the operation of the food establishment shall be removed from the premise.
