    Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 90 days. Correct By: 19-Feb-2016
  • CLEANING, FREQUENCY AND RESTRICTIONS
    Observation: The ice machine has a built up of slime and calcium deposits by the cooling condenser. The unit should be emptied, drained and cleaned and sanitized. Once clean, develop a cleaning frequency to keep unit clean.
    Correction: Clean the ice machine as often as necessary to prevent calcium and slime build up. Correct By: 19-Feb-2016

    Observation: Chicken soup cooling in a pot in the walk-in cooled 15F within 45 min.
    Correction: Adjust current methods or procedures to facilitate rapid cooling. Some of the methods dicussed included adding ice to the soup, putting it into a different (cold) pan to cool, and placing a large spoon in the soup to stir it periodically while cooling. Correct By: 27-Nov-2014
