CLEANING, FREQUENCY AND RESTRICTIONS Observation: The ice machine has a built up of slime and calcium deposits by the cooling condenser. The unit should be emptied, drained and cleaned and sanitized. Once clean, develop a cleaning frequency to keep unit clean.

PROPER COOLING METHODS - CRITERIA (corrected on site) Observation: Chicken soup cooling in a pot in the walk-in cooled 15F within 45 min.
Correction: Adjust current methods or procedures to facilitate rapid cooling. Some of the methods dicussed included adding ice to the soup, putting it into a different (cold) pan to cool, and placing a large spoon in the soup to stir it periodically while cooling. Correct By: 27-Nov-2014
