    Observation: Chicken in lower part of main cook line deli top cooler is at 44 degrees F. The thermometer dedicated to this unit was also at 44 degrees, indicating the unit is not holding at 41 degrees F or lower. The unit was adjusted during the inspection. The dial for adjustment in the lack of the unit may have been moved accidentally. Operator to look at the dedicated thermometer on a daily basis to make sure the dial is not moved.

  • EQUIPMENT AND UTENSILS - FOOD CONTACT SURFACES, CLEANABILITY
    Observation: Several working containers of rice in dry storage are stored in "cardboard-lined" food containers. The inside of the containers are not smooth and easily cleanable.
    Correction: Replace existing cardboard containers with plastic, food grade containers that can be cleaned when necessary. Correct By: 03-Jun-2016

  • UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - SELF DRAINING POSITION
    Observation: Several trays and pans above three compartment sink on the drying rack are stacked inverted, but inside each other and not allowed to dry between uses.
    Correction: All dishes need to be allowed to air dry as easily as possible between cleaning. The trays and pans were pulled apart and set on each other so there are significant gaps between the dishes in order for drying to be accomplished. Correct By: 29-Dec-2014
