Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site) Observation: There was ready-to-eat ham stored under raw roast beef in the walk in cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
HAND ANTISEPTICS Observation: Food employee observed using an unapproved hand antiseptic and not rinsing hands with clean water before handling food or using single-use gloves.
Correction: Food employees shall use approved hand antiseptics or hands shall be rinsed with clean water before handling food or using single-use gloves.
CERTIFIED FOOD MANAGER – REQUIREMENT Observation: There is no Wisconsin Certified Food Manager for this establishment. There has been a change in managers since last inspection. Current manager has attended the Serve safe class but has not applied to the state for certification.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 6 months.
IN-USE UTENSILS, BETWEEN USE STORAGE (corrected on site) Observation: Tongs used for handling raw hamburger were improperly stored. Handle was touching the portion of the container that was exposed to raw hamburger
Correction: Store in-use utensils in the food item with handle extended or on a clean surface. Another container was placed in the freezer for the tongs.
