Critical: PHF/TCS, HOT HOLDING (corrected on site) Observation: Cheese omelets in chaffing dish is hot held at 130°F, ham hot held in same unit is 110 degrees F.
Correction: Maintain hot potentially hazardous foods at or above 135°F. Operator decided to dump the current omelets and ham insteasd of re-heating.
DEMONSTRATION OF KNOWLEDGE Observation: The Person in Charge (PIC) is unable to demonstrate knowledge of dishwashing order, hot hold temps, and reheat temps of foods to be placed on food bar.
Correction: The person in charge shall obtain training or training materials in the areas of [items] so they are able to demonstrate knowledge and train employees on proper food safety practices.
FOOD TEMPERATURE MEASURING DEVICES - PROVIDED Observation: No thermometer is present for monitoring temperatures of foods in refrigerator.
Correction: Provide thermometers that are easily accessible and capable of taking temperatures in food.
WAREWASHING - CHEMICAL SANITIZER CONCENTRATION (corrected on site) Observation: Quat sanitizer was less than 150 ppm sanitizer concentration. Water was re-filled with luke warm water and 2 pumps of quat to give 200ppm.
Correction: Provide a test kit to allow accurate determination of the sanitization concentration.
