    Observation: Employees are unaware of the illness reporting requirements to the person in charge.
    Correction: Provide training to all employees on the signs and symptoms of foodborne illness and explain the requiremnts for reporting to the person in charge. Correct By: 16-Nov-2015
  • Critical: PHF/TCS, HOT HOLDING (corrected on site)
    Observation: BBQ beans and beef brisket ho is hot held at 127°F in the GE roaster appliance.
    Correction: Maintain hot potentially hazardous foods at or above 135°F. Beans reheated to 180F (165F and above.)
  • Critical: PHF/TCS, COLD HOLDING
    Observation: Potentially hazardous foods in walk-in cooler are stored at 47F and above including cooked chicken, sliced tomatoes, jambalaya, and other food. Walk-in cooler air temperature is 47F and water is dripping from the cooling unit overhead boxes of food. Cottage cheese on ice is cold held at 46.4°F and cream cheese spread on ice is cold held at 50.4F in the kitchen.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Discard potentially hazardous foods which have been held above 41F for more than 4 hours or for an unknown amount of time. Maintaining TCS foods under the cold temperature control requirements prescribed in this code will limit the growth of pathogens that may be present in or on the food and may help prevent foodborne illness.
  • DEMONSTRATION OF KNOWLEDGE
    Observation: The Person in Charge (PIC) is unable to demonstrate knowledge of corrective action requried for potentially hazardous foods cold held above 41F for an extended period of time.
    Correction: The person in charge shall obtain training or training materials in the areas of cold holding so they are able to demonstrate knowledge and train employees on proper food safety practices. Recommended operator review Department of Public Instruction food safety plan template section on corrective actions which will be emailed to person in charge. Correct By: 26-Nov-2015

    Observation: Wiping cloth used for wiping counters stored on counter and in soapy water bucket with no sanitizer buckets set up.

    Observation: Prewash drainboard has expanded foam between it and the wall which is not completely sealed for easy cleaning.
    Correction: Equipment shall be spaced from wall and other equipment to allow cleaning on all sides, sealed to adjoining equipment walls or elevated on legs to allow for easy cleaning. Trim expanded foam and complete sealing of caulk or other suitable material between the prewash drain board and the wall. Correct By: 27-Nov-2015
