FOOD LABELS - PROVIDED Observation: Packaged pudding in the self-service cooler is not labeled. The person-in-charge is having Davians make the labels. Discussed that the following shall be printed on the labels: common name of food, ingredients in order of predominance, quantity, name of business or manufacturer and major food allergens.

Critical: PHF/TCS, COLD HOLDING Observation: Cheese (48 F) and Tomatoes (47 F) in the service line cold holding unit is cold held above 41°F. Discussed that it could partially be because the walk-in cooler is maintaining a warmer temperature. The manager contacted the repair company and stated that they just repaired the cooler last week.
Correction: Maintain cold potentially hazardous foods at or below 41°F Correct By: 01-Dec-2015
PROPER COOLING METHODS - CRITERIA Observation: Chicken observed cooling in deep containers with tight-fitting lids. Discussed properly cooling in a loosely covered shallow pan.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.

Critical: PHF/TCS, COLD HOLDING Observation: Sliced cheese (49 F) and Sausage (46 F) in the grill reach-in cooler is cold held above 41F.
The cooler was adjusted during inspection and observed at 48 F by the end of the inspection. Discontinue using the cooler until it has been repaired and is maintaining 41 F or below.
