  • Critical: WHEN TO WASH (corrected on site)
    Observation: Employee observed not washing hands after coming in from outside. Instructed employee to wash hands after coming in from outdoors (taking our garbage, smoking, etc). Discussed when to wash hands.
    Correction: Before working with food, clean equipment, utensils, and single-use or single service articles food employees shall properly wash their hands.
  • Critical: COOLING (corrected on site)
    Observation: Lasagna (made at 9:30am) was 94F at 10:45am. Rapidly cool PHF/TCS foods. Suggested that the operator/staff cut the lasagna after it is cooked and place the individual slices into the aluminim containers (this is how it is reheated and served).
    Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours.
  • CONSUMER ADVISORY
    Observation: No consumer advisory provided or the consumer advisory. Owner stated he will program the receipts to have it.
    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition.
  • FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS
    Observation: The following food−contact surfaces have encrusted soil accumulations:
    - Floor under equipment, shelving, etc. Be sure to move equipment out and clean under and behind.
    - Grill line equipment (shelving, sides, etc)
    - Floor under grill area
    - Shelving next to fryers
    - storage unit (under hot hold unit that holds sauces)
    - True 2-door prep cooler (across from Walk-in cooler): inside, gaskets, handles, shelving, etc
    Much more frequent cleaning needs to be done of these items.
    Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.
  • GARBAGE/REFUSE - MAINTAINING REFUSE AREAS AND ENCLOSURES
    Observation: The outdoor storeage area/dumpster area needs to be cleaned/organized. The grease trap needs to be cleaned and the lid must remain closed at all times. Do not store equipment in dumpster area, as it provides shelter for animals.
    Correction: Remove all unnecessary items from storage area or enclosure used to store refuse, recyclables, and returnables.
