Correction: Do not use any plastic containers that are cracked or chipped. Keep all containers, plastic buckets, etc, clean.
NON-FOOD CONTACT SURFACES - CLEAN Observation: Inside bottom of upright cooler is soiled with food debris.
Correction: Clean the inside of this cooler and keep it clean.

Routine
Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS Observation: There are ready-to-eat foods (eg. cooked shrimp) and prepared vegetables stored under raw meat and seafood in the walk-in cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw meat and raw vegetables. May want to designate one shelf unit for raw meat and another shelf unit for cooked and prepared food. Discard ready-to-eat foods that show evidence of contamination.
Critical: COOLING Observation: Cooked breaded chicken in pans on counter are not cooling properly and is at 110 F after about 2 hours.
Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours. After cooking, spread out pieces of chicken on trays and then put in walk-in cooler. This will cool the chicken quickly, before putting in deeper pans.
LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME Observation: Corn starch, flour and sugar are stored in unlabeled containers.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
HANDWASHING SIGNAGE Observation: No handwashing signage provided at handwashing sinks in kitchen and in toilet rooms.
Correction: Provide handwashing signage at all handwashing sinks used by food employees.
