Critical: RAW ANIMAL FOODS-COOKING TEMPERATURES (corrected on site) Observation: Raw walleye was cooked to a temperature of 118°F. Correction: Cook potentially hazardous raw animal foods to the appropriate time and temperature. Adjust procedures and methods. Recooked walleye to 154. Always cook fish to at least 145 degrees unless customer orders under cooked fish. Critical: PHF/TCS, HOT HOLDING Observation: Mushrooms were hot held at 115°F Correction: Maintain hot potentially hazardous foods at or above 135°F. Added water underneath the pan of mushrooms to conduct the heat from the steam table to the mushrooms. WAREWASHING - RINSING PROCEDURES Observation: Dishes are improperly rinsed after cleaning in the dishwasher. The dishwasher is not completely draining the wash and rinse water prior to running a sanitize cycle. Correction: Equipment and utensils shall be rinsed after washing in the rinse compartment of a 3-compartment sink, in a warewashing machine rinse cycle or rinsed as approved in an alternative warewashing plan.
