Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) Observation: Cottage cheese in walk-in cooler, sliced green pepper in Turbo Air one door reach in cooler, and open container of milk in two door reach in cooler were missing date marks. Mashed potatoes, cooked noodles, and turkey in freezer were missing date marks.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Food items in use were labeled during the inspection.
Critical: SEWAGE - BACKFLOW PREVENTION Observation: A connection exists between the sewage system and a drain from the kitchen ice machine. The bar ice bin currently has an air break, but needs an air gap from the sewage system.
