WAREWASHING MACHINES - AUTOMATIC DISPENSING OF DETERGENT AND SANITIZERS Observation: The warewashing machine does not dispense detergent or sanitizer automatically.
Correction: Repair or replace the warewashing machine. Warewashing machines shall automatically dispense detergents and sanitizers. The Reinhart repair tech has been contacted and he is expected to come in today. Call us after the unit has been repaired.
CERTIFIED FOOD MANAGER – REQUIREMENT Observation: There is no Wisconsin Certified Food Manager for this establishment.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 30 days. Sign up for the class and email us the list of chefs/managers that have signed up for the class by Apr, 30, 2015. Per the Chef Chad Steen he had taken the class online and obtained a certificate. He has registered to take a proctered exam on May 18th, 2015.
WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (corrected on site) Observation: Wiping cloth used for wiping counters stored on the counter. .
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. A 100 ppm chlorine solution was made.
FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION (corrected on site) Observation: Half and half cream is subject to potential contamination by being stored next to a container of raw chicken.
Correction: Change methods or procedures to protect foods from contamination. Item was moved away and the meats were segregated to a corner of the prep cooler.
THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE (repeated violation) Observation: The walk in cooler, the True prep cooler and the Traulsen reach in is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device. Correct By: 15-May-2015

Critical: FOOD CONTACT SURFACES - WAREWASHING CHEMICAL SANITIZATION EXPOSURE TIME (corrected on site) Observation: Utensils in Ecolab dishwasher are not exposed to the Sodium Hypochloride sanitizer for the required amount of time. The sanitizer bottle was empty.
Correction: Adjust warewashing operation procedures or equipment to assure utensils are exposed to the chemical sanitizer solution for the required time period. A fresh container of Sanitzer soultion was delivered during the inspection.
