    Observation: Raw cod in open prep fish cooler unit is cold held at 45°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Unit was found to be unplugged resulting in the high temperature. Unit was plugged in and the original fish was exchanged with fish of correct temperature. Correct By: 19-Nov-2013

    Observation: The buckets of quat sanitizer solution for wiping cloths is not being used according to manufacturer’s use directions. The solution is at 100 ppm and per manufacturer's use directions should be between 200-400 ppm.
    Correction: Change procedures and provide training to employees on proper use of toxic chemical following manufacturer's directions for use. Check sanitizer solution throughout the day to be sure that solution concentration meets manufacturer's directions. Replace sanitizer solution when concentration does not meet manufacturer's directions or if solution becomes dirty. Correct By: 19-Nov-2013
