Correction: Unapproved equipment shall be removed from food service. homestyle dishwasher does not reach 180 F for sanitizing dishes properly

Correction: Provide base coving and clean kitchen floor.

ADEQUATE EQUIPMENT FOR TEMPERATURE CONTROL Observation: Homestyle refrigerator is maintaining 41 F or less.
Correction: Once homestyle refrigerator no longer maintains 41 F or less, the unit must be replaced with a commercial unit. Currently the walkin cooler is used to cool food rapidaly.
POSTING OF CERTIFICATE Observation: There is no State of Wisconsin food manager’s certificate posted in the food establishment.
Correction: Fill our provide applications and send to Madison. Once received, post the State of Wisconsin food manager's certificate.
CONTROLLING PESTS - INSPECTING PREMISE Observation: Evidence of rodents in the utility room, bottom kitchen cabinet and behind refrigerator and freezer.
Correction: Clean up old rodent droppings and rountinely inspect facilities for insects and rodents. Exterminate if rodents are still present.
