Correction: After cleaning, sanitize equipment and utensils. Correct By: 04-Aug-2015 THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE Observation: There is no thermometer found in the True glass door cooler. Critical: RTE/PHF-TCS PROPER DATE MARKING Observation: Food items (eggs, waffle mixes) in cooler are inconsistently date marked on the sheets on the outside of the cooler. Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. PERSONAL CLEANLINESS - HAIR RESTRAINTS Observation: Employee noted working in food preparation/cooking area without a hair restraint. Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.). HANDWASHING SINKS, INSTALLATION - NON-HAND OPERATED Observation: Handwashing sink is not non-hand operated and needs to have handles replaced to meet code. Correction: Employee handwashing sinks shall be non hand operated and if metered shall provide a flow of water without the need for reactiviation for at least 15 seconds.
