Observation: Discussed cooling practices with PIC leftover and soups/gr meats cooled on counter and placed into refigeration. Good retail practices used however cooling times not verified. Please confirm with kitchen staff proper procedures.
Correction: Adjust method or procedures to ensure that foods are cooled from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours.

Observation: The boxes and beer stock stored on the floor in the walk in cooler.
Correction: Store all food items 6 inches above the floor.

Observation: There was no thermometer available for checking food temperatures.
Correction: Provide an accurate food thermometer. I recommend a digital thermometer.
- CERTIFIED FOOD MANAGER – REQUIREMENT
Observation: There is no Wisconsin Certified Food Manager for this establishment.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 90 days. Food manager course may be taken through Wisconsin Restaurant Association, Tavern League, WCTC, etc.
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: 1. Ice scoop for ice bin behind bar was stored with handle in direct contact with ice. 2. Ice scoop in basement should be kept covered, also do not store on cloth.
Correction: Store in-use utensils in the ice with handle extended, on a clean surface, protected from contamination.
- EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED
Observation: Home style Kenmore refrigerator is being used for food storage. (behind bar)
Correction: Replace this cooler with a commercial cooler.
