Observation: The warewashing machine does not dispense sanitizer automatically.
Correction: Repair or replace the warewashing machine. Warewashing machines shall automatically dispense sanitizers. Use 3-compartment sink to sanitizer dishware until unit is repaired.
- OPEN DRINK CONTAINER
Observation: Drinking cup without cover was observed in food preparation area.
Correction: Provide approved beverage container in food preparation area.
- PERSONAL CLEANLINESS - HAIR RESTRAINTS
Observation: Employee noted working in food preparation/cooking area without a hair restraint.
Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.).
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Knife was improperly stored underneath cutting board on the main prep line.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: The following non-food contact surfaces are soiled: floor of walk-in freezer and shelf inside of ice machine.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
- REPAIRING - PREMISES, STRUCTURES, ATTACHMENTS, AND FIXTURES - METHODS
Observation: The physical facilities listed are not in good repair. The walk-in cooler door is coming away from the foundation and not flush. The fourth compartment of the bar sink is leaking*.
Correction: Maintain the physical facilities so they are in good repair at all times. Repair or replace. *Sanitizer concentration cannot be maintained with leaky faucet. Repair leak or measure and maintain sanitizer level every 30 minutes.

- USING A HANDWASHING SINK - ACCESSIBLE
Observation: Handwashing sink observed to be block by a cart and trash can during inspection and is unavailable for proper handwashing. Prep sink is being used for hand washing and shall be used for food prep only.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing.
- TOXIC SUBSTANCES - IDENTIFYING INFORMATION, PROMINANCE - COMMON NAME-WORKING CONTAINER
Observation: Working containers of chemical spray not labeled with contents.
Correction: Label working containers.

Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
- DRYING MOPS
Observation: Store mops inverted to ensure they properly dry to prevent pest attraction.
Correction: Store mops to allow them to air dry without soiling walls, equipment and supplies.
