Observation: Ham, hard boiled eggs, and pasta salad were placed in the salad bar cold holding unit without being previously cooled to 41 F or below.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.
- FOOD LABELS - LABEL INFORMATION
Observation: Prepackaged sandwiches, parfaits, and baked goods processed onsite are missing labeling information: ingredients in order of predominance, quantity, name of business or manufacturer, major food allergens, and nutritional information.
Correction: Label information shall include: common name of food, ingredients in order of predominance, quantity, name of business or manufacturer, major food allergens, and nutritional information.
