At the time of inspection, there was a soiled spoon stored in the handwash sink. Spoon was removed and violation corrected.

(A) A handsink shall be maintained so that it is accessible at all times for FOOD EMPLOYEEs
use.
(B) A handsink may not be used for purposes other than handwashing except as specified
in § 2-301.15.
(C) An automatic handwashing facility shall be used in accordance with manufacturer’s
instructions.

Our Dept. received an anonymous complaint to our Dept. stating that there was a 4 year old child in the food prep area next to the person
making his sandwich.
The owner stated that her daughter just arrived from India, and is working on finding day care for her that can help her transition to the
United States, as she is very scared right now,
Temporarily, you can set up a designated area back by the office away from food product and food equipment, or set up a designated table for
her in the dining room. She cannot be allowed in the food prep area . Owner agreed.

• Observed vents and shelves in the walk-in cooler with dust build up.
(C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be kept free of an accumulation of
dust, dirt, FOOD residue, and other debris.
Violation 42 F: 4-903.11 Equipment, Utensils, Linens, and Single-Service and Single-Use
Articles.
• Observed drinking cups under the drain of the hand wash sink. Issue corrected at time of inspection.
(A) Except as specified in ¶ (D), cleaned EQUIPMENT and UTENSILS, laundered LINENS, and
SINGLE-SERVICE and SINGLE-USE ARTICLES shall be stored:
(1) In a clean, dry location;
(2) Where they are not exposed to splash, dust, or other contamination; and
(3) At least 15 cm (6 inches) above the floor.
(B) Clean EQUIPMENT and UTENSILS shall be stored as specified under ¶ (A) and shall be
stored:
(1) In a self-draining position that allows air drying; and
(2) Covered or inverted.
(C) SINGLE-SERVICE and SINGLE-USE ARTICLES shall be stored as specified under ¶ (A) and shall be kept in the original protective PACKAGE or
stored by using other means that afford protection from contamination until used.
(D) Items that are kept in closed PACKAGES may be stored less than 15 cm (6 inches) above
the floor on dollies, pallets, racks, and skids that are designed as provided under §
4-204.122.
Employee health policy is written, hair restraints are used, observed proper glove use and observed proper hand washing.
Note: Discussed that by keeping the covers on the containers in the make table will keep the top of the potentially hazardous food colder.
