  • Rule Violation and Requirement: VIOLATION OF SECTION 4-501.114(A) *PRIORITY* The chlorine sanitizer concentration, pH, or temperature is not adequate, specifically:
    The dishwasher did not produce chlorine at the final rinse at the required level of 50 ppm. The sanitizer bottle was found to be empty. Operator replaced this with a fresh bottle and the dishwasher was observed producing 50 ppm chlorine. Please read below:
  • Rule Violation and Requirement: VIOLATION OF SECTION 5-205.15(B) The plumbing system is not maintained in good repair, specifically:
    The mop sink faucet has a backflow device that is under constant pressure. Do not use the supplied Y valve for turning the faucet on. Always turn faucet off at faucet handles. The back flow device can be ruined by using the Y valve. Please read below:
  • Rule Violation and Requirement: VIOLATION OF SECTION 2-401.11 *PRIORITY FOUNDATION* Food employees eat, drink or use tobacco in unapproved areas or use an inappropriate beverage container for drinking, specifically:
    One inappropriate drink cup observed in the three compartment sink. One other drink cup used by employees does not meet our rules. This cup was found on the Norlake refrigerator and was moved to the employee desk area. Please see notes from your last inspection and please read below:

    One handwashing station in the back dishwashing area was blocked by several large items in the front of it. Please keep this area clear.
