Observation: Observed improper cooling: tongue made last night still at 48-59F was left on counter over night to cool, rice pudding made yesterday afternoon still at 48F.
Correction: Do not serve to the public. The cooling process must be monitored. Food must be cooled quickly from 135F to 70F in 2 hours then to 41F in 4 hours. Spread food in a shallow/single layer, cut large pieces into smaller portions, and use ice baths to facilitate cooling.
