Observation: Hot holding at improper temperatures.: hot dogs in well on left side are only 133 F. Water underneath is only around 140 F even though setting in on high.
Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria. All hot dogs on this side were used up within 4 hour period. They switched TCS food over to another row which is heating correctly and will put the buns over the row that is too low in temperature.

Observation: Working containerof chemical is not properly labeled. Spray bottle of window cleaner is labeled as degreaser.
Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

Observation: Containers of chemicals are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Chemical bottle stored with food on a shelf up front.
Correction: Containers of chemicals must be located in an area that is not above food, equipment, utensils, linens or single service items. Spray bottle moved to proper location during inspection.

Suggest providing shallow metal pans to aid in the cooling process. Make sure cooling wands are protected from contamination while in storage. Suggest providing an additional digital thermometer which has a thin tip. Make sure personal items are stored in a separate location from food and single service items. Change of ownership. Issue yearly health permit.

Observation: The food contact surface of some of the plastic pans is not durable, nonabsorbent, easily cleanable, resistant to pitting. Pans are badly cracked and no longer cleanable.
Correction: Replace the pans to permit easy cleaning and prevent the migration of deleterious substances, or transference of colors, odors, or tastes to food.

Observation: @Sanitizing Agent@ being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940. Quaternary ammonium in 3-compartment sink is >400 ppm.
Correction: Utilize only quatermary ammonium that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces. Reset up the sink with proper concentration of sanitizer. Went over the set up of the sink and proper use of test strips.
