Observation: The permit holder failed to discontinue operations and notify the Health Department that an imminent health hazard may exist because of an emergency: Water ponding over floor drain in basement storage area. Water was backing up from the drain onto the floor due to a malfunctioning sump pump in the sump pit. Supply hose from soda tank was submerged in the ponding water. Base of cart containing muffins was also submerged in the ponding water. Source of water could not be determined. No evidence of infiltration from exterior observed during the inspection. Owner and area supervisor decided to voluntarily close the facility when they were advised of the conditions described above.
Correction: Repair drain/sump pump to prevent backup/ponding of water in the basement storage area. Clean and sanitize all affected areas and equipmnet, then call the Health Department prior to resuming any food service operations at the facility. NOTE: Muffins on cart were voluntarily disposed.

The purpose of today's visit was to conduct a complaint investigation in conjunction with a risk-factor assessment inspection. Complainant allegedly observed an cashier who appeared to be sick (runny nose and red eyes) and also employees were not wearing gloves and hair restraints. CFM was not aware of complaint and stated there were no other complaints. No one reported and appeared sick at the facility within past few weeks. EHS observed employees wearing gloves and using hats and hairties as hair restraints. Based on today's observations, complaint is not confirmed. Observation: When tested, the chlorine-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the sanitizing buckets with a concentration of 0 ppm total chlorine. CFM corrected solution to 50 ppm.
Correction: A chlorine-based sanitizing solution shall have a minimum concentration of at least 50 to100 ppm total chlorine when tested using the appropriate test kit.

Observation: When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the 3-vat sink with a concentration of 400 ppm total quaternary ammonium compound. CFM corrected solution to 200 ppm
Correction: The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR based on the manufacturer's use directions and using the appropriate test kit.
