The table in the dish area is worn and water damaged on top and should be repaired(top replaced) or replaced. The press wood table is no longer smooth and easily cleanable.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands. (Ham at salad prep)
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Critical: Reheating for Hot Holding*
    Observation: Meatballs classified as ready-to-eat (RTE) taken from a commercially processed, hermetically sealed container, or from an intact packaged purchased from a food processing plant, was not reheated to the proper temperature for hot holding.
    Correction: Reheat commercially processed RTE food for hot holding to 135°F or above.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Sausage and pulled pork cold holding at improper temperatures in the Coke glass door refrigerator
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: One handwashing facility observed turned off and other observed with the faucet removed preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Repair the handwashing sinks.
  • Plumbing System Maintained in Good Repair (corrected on site)
    Observation: The sink basin at the 3 basin sink is slow to drain.
    Correction: Plumbing systems and components shall be maintained in good repair. If water from the drain does come out onto the floor, stop and clean the floor with a the mop and floor cleaning chemicals before continuing to prevent cross contamination from employees tracking through the water.
