Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
Comments:
Employee health policy has not been implemented. An employee health policy (either oral or written) became mandatory April 1, 2008. Environmental Health Specialist (EHS) provided the manager with hand-outs about employee health policy. Manager agreed to immediately implement an employee health policy. EHS advised manager that no cleaning supplies / cleaning products should be stored above clean utensils / containers or above the three compartment sink. EHS observed the handle of the ice scoop submerged in the ice. EHS advised manager to place the ice scoop in a clean location or to keep the ice scoop in the ice so the handle is not submerged. EHS advised the manager that the hand sink is for hand washing only. EHS observed coffee in the hand sink. Policy may be oral or written. Provided the PIC with a food illness flow chart with employee restrictions/exclusions and an example of a written employee health policy from the 2005 FDA Food Code.
