Violation: 3330 - Corrected During Inspection Critical Working containers of cleaning solutions are not properly labeled.
Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

August 04, 2008 (Routine)


Violation: 0830 - Corrected During Inspection Critical The ready-to-eat (RTE) commercially processed hot dogs and chili in the refrigeration unit were not properly dated for disposition after opening. Manager advised the items were opened yesterday. Manager complied with properly date marking the food items. Violation was corrected during inspection.
Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
Comments:
Employee health policy has not been implemented. An employee health policy (either oral or written) became mandatory April 1, 2008. Environmental Health Specialist (EHS) provided the manager with hand-outs about employee health policy. Manager agreed to immediately implement an employee health policy.
EHS advised manager that no cleaning supplies / cleaning products should be stored above clean utensils / containers or above the three compartment sink.
EHS observed the handle of the ice scoop submerged in the ice. EHS advised manager to place the ice scoop in a clean location or to keep the ice scoop in the ice so the handle is not submerged.
EHS advised the manager that the hand sink is for hand washing only. EHS observed coffee in the hand sink. However, the hand sink is accesible to customers -- manager advised a customer dumped coffee in the hand sink.

Violation: 3340 1 - Critical Observed a container of Raid Earth Options Insect Spray and a bottle of Pennzoil stored in the dish washing / dry storage area. Pennzoil was observed stored on the three compartment sink.
Containers of chemicals must be separated by spacing or partitioning to prevent contamination of food, equipment, utensils, linens or single service items. Pest control products may only be applied by a licensed pesticide applicator. No pesticides or pest control products may be applied by an unlicensed applicator.
Comments:
Bleach water in wiping cloth bucket measured at a concentration of 100 ppm. Observed chlorine test strips in the facility.
Observed coffee grounds in the self-service area hand sink. Hand sink is to be used for handwashing only, not as a dump sink.
Spoke with Person in Charge (PIC) about employee health policy. An employee health policy must be implemented by April 1, 2008. Policy may be oral or written. Provided the PIC with a food illness flow chart with employee restrictions/exclusions and an example of a written employee health policy from the 2005 FDA Food Code.
Provided the PIC with a summary of major food code changes for review.
