Observed food stored high on lower level of open deli case, store and display food so that air can flow
Observed unit holding shell egg holding at 50 degrees (between 46-50 degrees), product will be moved to walk-in unit holding below 41 degrees unit thermometer reading 36.6-46.9, employee states units go on defrost mode in the mornings, monitor unit, service and replace if needed
All units must hold at or below 41 degrees at all times
Clean unit as needed to prevent buildup observed dirt debris buildup on shell egg unit on floor of walk in unit.
