#1 No one currently on site possesses a Basic Food Safety Training certificate of any kind. Workers did not have working knowledge of how to set up a 3 comp sanitizer sink. Knives observed rinsed only and placed back on cutting board for subsequent unknown use. Rags soaking in Vegetable Prep sink, which was stained and unclean. Summons will be issued if onsite workers are not certified by July 31, 2012 in Basic Food Handling Safety.
#14 3 compartment sink - sanitizer compartment being used as rinse sink, not set up with sanitizer solution. COS
