  • 229.163 (h) (6) wash as needed. Observed an employee wipe down a counter, wipe hands with a cloth soaked in a quatenary ammonium based sanitizer, and then handle ready to eat food with bare hands. Employees must wash their hands whenever they change from one task to another such as immediately before engaging in food preparation, working with exposed foods, clean equipment and utensils and unwrapped single service and single use articles. Hand sanitizer gel and hand sanitizing wipes are not a substitute for hand washing; these items can only be used after employees wash hands.
  • Observed an employee grab food from the walk in refrigeration unit, wash hands, and then handle ready to eat food with bare hands. If employees are going to handle ready to eat food with bare hands employees must first perform a double hand wash and then scrub nails with a nail brush and/or apply an alcohol based hand sanitizer.
  • 229.165 (d) (1) (B)free of breaks, cracks. The spatulas in use were not free of cracks and chips. Repair or replace these items immediately.
