- A fly swatter is sitting adjacent to the slicer and 4 uncut onions on same table. * Surface is to be cleaned, sanitized and swatter cannot be used in food prep area. - A sneezeguard is not present in front of scale in deli to prevent food contamination by consumers.

Wire rack over 3 basin sink is used to store foam food containers instead of being used to air-dry clean food contact equipment after being sanitized. ** 46.771 - Drying Clean Equipment & Utensils (a) Air-drying or adequate draining required. After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining as specified in 21 CFR 178.1010(a) (relating to sanitizing solutions) before contact with food. (b) Cloth drying. After cleaning and sanitizing, equipment and utensils may not be cloth-dried, except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
