    Agent noted >20 small flies around drains in dish washing area. Facility instructed to clean and sanitize drain / drain covers daily. Monitor to assure compliance.

    Working container (spray bottle w/ degreaser) used for storing chemicals taken from bulk supplies, was not marked with the common name of the chemical. Labeled during the inspection.

    Observed food residue present on knives stored clean in scabbard on kitchen wall. The scabbard & all the knives were removed, cleaned, & sanitized.

    Observed food/grease buildup on various shelves throughout the kitchen--all were noted to management. Clean/correct all by tomorrow.

    Observed >20 small flies in the facility. A pest management operator treated for this "light small fly activity" on October 11, 2010. Continue treatment & correct by October 29, 2010.
