Product was 53 F in center of mass. Volume prohibits rapid cooling. Product discarded.

Product to be discarded within 2 hours of cook time. 2. Food product thermometer was inaccurate by -8 F measured against calibrated thermocouple in cold food product. Thermometer recalibrated at the time of inspection. 3. Water (hot) inlets to fill hot buffet line steam tables is submerged in steam table water, as they enter water basin thruogh bottom of the basin. No visible backflow prevention device noted. Informed operator that correction required within 30 days 4/5/07 - Violation corrected.

First aid ointments stored on shelve directly over containers of clarified butter and flour. First aid ointments removed to proper storage at time of inspection.
