In discussion with Dennis, beans are cooked in a large pot, then left to sit out at room temperature for hours, then placed in walk in cooler in same large pot to cool. Provided education. Must place beans in shallow pans, no more than 4 inches deep, and cool in walk in cooler with air circulation. Dennis agreed to go over the with all the cooks and said he plans to purchase more shallow pans. Must correct remaining violations no later than August 1, 2014. |
