Discussed cooking and holding procedures, and observed cook/bar tender, Melissa, measure temperature of chicken wings after removing from deep fryer (170 dF). Observed that new door was installed on walk-in cooler (opens and closes easily now, better seal). Observed UV system - ok. Operator, Yvonne, requested that I call her on Monday about whether or not her fourth quarter water sample results were received. Will call Yvonne back with information at 570-729-8426. |
