08/14/2013 | Inspection | Discussed 8/6/13 complaint with head chef, Leo. Leo was aware of the complaint and said one of the kitchen employees made a mistake and left chicken thawing in the sink overnight. The chicken was discarded after this was brought to Leo's attention. I discussed proper thawing techniques with Leo at the time of inspection. Note: Several hand wash stations set up in the dining hall for campers to use lack hot/tempered running water. Proper hand washing requires using hot/tempered running water. Must correct all violations immediately and send Corey DiLorenzo an email at crd05@health.state.ny.us addressing corrective actions taken to all cited violations no later than August 28, 2013. |
