  • *4.5/4.6 Observed the ice machine trough was soiled. Food contact surfaces shall be washed, rinsed and sanitized and shall be clean to sight and touch.
  • 6.4 Clean the ceiling vents and surrounding areas which are dusty.
  • 4.4 Repair the damaged door seal on the walk-in cooler, to provide a cleanable surface.
  • 4.4 Observed the waitress cooler was holding at 44°F-45°F. Repair this unit to assure 41°F and below is maintained. Foods in this uint were holding at 41°F and below.
  • 6.4 Repair the damaged base cove in the mechanical room to provide a cleanable surface.
4/6/2012Standard 1PROTECTION FROM CONTAMINATION: Observed the cream of chicken soup was dented on the top seam. Packages of food shall be in good condition to protect the integrity of the contents and to prevent potential contaminants. This canned food item was relocated to damaged canned goods shelf today.
3 accurate thermometers available.
Observed proper chemical storage and labeling.
PIC knowledgeable of proper thawing under refrigeration.
Reportedly, foods are cooled using a chill stick, toassure cooling parameters are obtained.
DATE MARKING: Observe the garlic spread was dated 1/31/12. Foods shall be dated the day of preparation or opening and shall be used or discarded in seven calendar days. Discussed with PIC today.
  • No violations at today's inspection. See Critical Control Point inspection dated 11/1/2011.
11/1/2011Standard2COOLING/COLD HOLDING: Observed bean soup, dated 10/31, in the walk-in cooler at 43°F. Foods shall be cooled from
135°F to 70°F within 2 hours and from 135°F to 41°F in a total of 6 hours. Reportedly, the soup will not be reheated and is only saved for meal portion planning. Discussed labeling the foods "not for service." PIC was knowledgeable of proper cooling procedures using an ice wand.
PROTECTION FROM CONTAMINATION: Observed the following canned goods dented on the seal:
-2 Cream of Mushroom
-Fruit Cocktail
Do not use canned goods dented on the seal in order to prevent possible contamination. Store dented cans in a separate designated area. PIC relocated the cans to the dented can storage today.
-Observed proper date marking throughout.
-3 accurate thermometers available.
-Observed proper chemical storage and labeling.
-PIC knowledgeable of proper thawing under refrigeration.
  • No violations at today's inspection. See Critical Control Point inspection dated 5/17/2011.
5/17/2011Standard 1DATEMARKING: Observed the following foods held beyond 7 days:
-Roast Beef 5/7
-Ham and Turkey 5/4
Ready-to-eat, potentially hazardous foods (PHFs) shall be dated the day of opening or preparation and used or discarded within 7 days. PIC discarded the food today.
-Observed employees wearing single-use gloves to avoid bare hand contact.
-2 accurate digital thermometers available.
-Observed proper thawing under refrigeration.
-PIC knowledgeable of proper cooling and reheating procedures.
  • 4.2 Quat sanitizer test kit unavailable. The test kit was water damaged and PIC is placing an order for a new test kit. Provide a quat test kit in order to monitor the concentration of the quat sanitizer. The quat sanitizer in the wiping cloth buckets were at proper concentration today (200 ppm).
