DATE MARKING: Observe the garlic spread was dated 1/31/12. Foods shall be dated the day of preparation or opening and shall be used or discarded in seven calendar days. Discussed with PIC today. |

11/1/2011 | Standard2 | COOLING/COLD HOLDING: Observed bean soup, dated 10/31, in the walk-in cooler at 43°F. Foods shall be cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F in a total of 6 hours. Reportedly, the soup will not be reheated and is only saved for meal portion planning. Discussed labeling the foods "not for service." PIC was knowledgeable of proper cooling procedures using an ice wand. PROTECTION FROM CONTAMINATION: Observed the following canned goods dented on the seal: -2 Cream of Mushroom -Fruit Cocktail Do not use canned goods dented on the seal in order to prevent possible contamination. Store dented cans in a separate designated area. PIC relocated the cans to the dented can storage today. -Observed proper date marking throughout. -3 accurate thermometers available. -Observed proper chemical storage and labeling. -PIC knowledgeable of proper thawing under refrigeration. |
