COOLING: Observed the following foods that were cooling improperly, in large portions, from the previous evening: -chicken and peppers 47°F -beef 56°F -refried beans 42°F Foods shall be cooled rapidly from 135°F to 70°F within 2 hours and from 135°F to 41°F in a total of 6 hours. Cooling methods include: small/shallow portions under refrigeration; ice bath; and chill sticks/wands. Discussed cooling methods with PIC. Cooling log provided today. PIC discarded the beef. -2 accurate long stem thermometers available. -Observed proper raw animal food storage. -Observed proper thawing under cold running, draining water. -Observed employees wearing single-use gloves and changing them often. |

PIC labeled the bottle today. R/DATEMARKING: Observed the following foods lacking a date mark: -carnitas, made Saturday -poblanos, made Saturday Ready-to-eat, potentially hazardous foods (PHFs) shall be dated the day of opening or preparation and used or discarded within 7 days. PIC dated the carnitas and poblanos today. PROTECTION FROM CONTAMINATION: Observed one tray of chorizo stored on top of sauce buckets in the upright cooler. Store raw animal foods separate from and below ready-to-eat foods in order to prevent possible crosscontamination. PIC relocated the chorizo today. HANDWASHING: No paper towels observed in the mens restroom. Maintain all hand sinks stocked with soap and paper towels at all times to facilitate proper hand washing. PIC replaced paper towels today. -See Standard 1 dated 9/6/11 for proper food handling notes. |
