Ice packs used to keep pudding cold. Discussed putting pudding in cooler prior to opening. Pudding was discarded. Deli cooler holding at 41°F. Foods in this unit are not maintaining 41°F and below. This is a repeat violation from previous inspection over the past three years. Discussed removing the deli cooler HOT HOLDING- Breakfast sandwich in hot holding unit at 110°F. Maintain potentially hazardous foods hot at 135°F and above. Breakfast sandwiches were discarded during this inspection. Soups are being reheated in the oven but oven does not appear to meet the requirements of reaching 165°F within two hours. After one hour soup was 84°F. Soup was reportedly 155°F after two hours and was discarded. If there are no means of reheating this operation will not be approved to reheat foods in bulk. | |
