Observation: filters are not clean. owner stated cleaning of hoods is scheduled

Observation: roast beef sitting at 72 degrees. was reheated to 165 degrees

Observation: gloves were not being used for all ready to eat-pickles, etc. gloves were put on. A thong could be used.

Observation: large roast was setting in roaster not on, but not cooling. Then taken to kitchen and put in lidded pan. Discussed proper cooling methods.
